Key Characteristics

• Ingredients: The primary components are fermented basmati rice flour and jaggery (or sometimes sugar). Clarified butter (ghee) is used for frying.
• Stuffing: A distinctive feature of the Gaya Anarsa is that it is often stuffed with khoya (mawa, or reduced milk solids) in the centre, adding a rich, creamy dimension to the sweet.
• Coating: One or both sides of the sweet are traditionally coated with sesame seeds or poppy seeds, which provide a pleasant nutty flavour and extra crunch.
• Preparation: The preparation process is time-consuming, often involving soaking the rice for up to three days, grinding it into a fine powder, mixing it with jaggery to form a dough, and le0ng it rest or ferment for several days before frying.
• Form: It typically comes in two shapes: a thin disk or a small spherical ball.
